In this work, the health advantages and disadvantages of a vegan diet were examined more closely by means of international studies. Keeping the human body healthy is a life task. Particulary in special nutritional approaches, such as veganism, an examinantion of the most important nutrients is of great importance. Deficiencies in minerals can be partly avoided by a conscious diet.Furthermore, selected, industrially manufactured, vegan substitute products were analyzed using their contents and nutritional tables. In a series of trials, products were reproduced and tasted and evaluated during a test with the industrial product as well as the non--vegetarian original.
