The thesis deals with the legal requirements for venison hygiene. More specifically, the national provisions (in particular the Lebensmittelsicherheits- und Verbraucherschutzgesetz, the Lebensmittelhygiene-Direktvermarktungsverordnung, the Lebensmittelhygiene-Einzelhandelsverordnung and the Lebensmittelhygiene-Zulassungsverordnung) and the regulations of the European Union (in particular the regulation [EC] 178/2002 as well as the food hygiene regulations [EC] 852/2004, [EC] 853/2004 and [EC] 854/2004) are part of the thesis. It is described how hunters, who have a special qualification (according to § 27 para. 3 LMSVG), and veterinarians participate in the investigation of the game meat. In addition, the general guidelines on food safety and food hygiene - such as, in particular, the general prohibitions on food, the food labeling, the HACCP principles, the Österreichische Lebensmittelbuch, the food inspections, etc. - are described. The obligation to carry out a trichinosis test for certain animal species, animal diseases, the role of the hunter as a food entrepreneur as well as the sale of venison from the scope of the Trade and Industry Code (Gewerbeordnung) are also included. Finally, the criminal provisions in the field of food law are described.
